Low Fat Vegan Cheddar Cheese Sauce

Cheese sauce just makes everything better, am I right? In our household, we use this cheese sauce on the daily. Not only do I love it, but my kids as well (and that's always a plus). A lot of vegan sauces tend to be very high in fat. What I like about this sauce is that it's low in a fat and delicious. Meaning, you don't have to feel any guilt about loading it on that bowl of broccoli !


This sauce is also a great way to get your kiddies to eat their veggies! My son will eat a whole bowl of broccoli if they have this magic sauce on them.


Anyways, enough with the chatter, let's get to the recipe shall we!


Ingredients:

1 small head cauliflower (about 4 cups chopped), steamed 1 small red bell pepper, roasted and peeled/seeds removed. ½ cup unsweetened soy milk (plain almond, or oat milk will work as well) ¼ cup nutritional yeast 2 tsp mellow white miso (optional, if you’re minimizing your salt intake you can skip it) 1 tsp lemon juice 1 tsp brown mustard ⅛ tsp turmeric


How to Make It

1 Blend all ingredients until smooth. 2 Transfer to a sauce pan and whisk to eliminate the air that got caught in it from blending. Heat until warm. My cauliflower had not cooled off totally when I blended, but I did this step anyway, just to get rid of most of the air bubbles. 3 Serve over anything your little heart desires!
