This recipe is a life saver. I love making this on busy week days when I'm looking for a quick and delicious meal. It's also great because it doesn't leave a big mess afterwards. The whole dish can be made with a single pan.

Ingredients:
-1 pint cherry tomatoes
-2 oz baby spinach
-1 small onion
-3 cloves of garlic
-¼ cup of basil
-8 oz linguine
-2 tbsp of olive oil
-Pinch of salt
-1 tsp of crushed red papers (or too taste)
-4 cups of boiling water
-Parmesan cheese (or vegan cheese)
Instructions:
1. Cut cherry tomatoes in half
2. Heat of a frying pan on medium high heat
3. Add all veggies to a frying pan
4. Add linguine to the frying pan
5. Add olive oil on top of the pasta
6. Top with a pinch of salt and some crushed red pepper flakes (to taste)
7. Add 4 cups of boiling water to the pan
8. Mix all ingredients together on medium high heat for about 5-7 minutes (may vary)
9. Let simmer (to thicken sauce) for about 10 minutes (the longer it simmers, the more the flavours come out)
10. Top with some parmesan cheese (or vegan cheese)
11. Top with some basil and serve
