This recipe was a fun one. Not only is it super fun to make with your kiddos, but it's little less carbs, making it a nice light snack! They also make a great appetizer for when you have friends or family over for a visit. Another plus, it's a lot easier to make than your average sushi! Check out the recipe below.
INGREDIENTS:
- 1 Cucumber
- 1/2 Avocado
- 1/2 Cup of Raw Carrots
- 1/2 Cup Red Peppers
- 1 Cup Sushi Rice
- 1 Tsp of Rice Vinegar
- 1/3 Cup of Water
INSTRUCTIONS:
Start by cutting the avocado in half
Core the cucumbers by removing all of the seeds
Bring a pot of water to a boil
Add the rice sushi and let simmer covered for 20 minutes (stirring occasionally)
Add rice vinegar to the rice
Let the rice cool for about 5 minutes
Line the bottom of the inside of the cucumber with sushi rice
Stuff carrots, peppers and avocado on top
Cut the cucumber into inch thick slices
Serve with some low sodium tahini or some yummy peanut sauce! and Voila!
