Energy Bites

These little bites of energy are very popular in my household. Not only are they super fun to make with the littles, but they are a great pick-me-up! I love to have one of these before a workout or if we are planning an active day with the family. They are super easy to make, nutritious and most importantly, delicious! The only caution is trying to only eat a few!


Here's the recipe below:


INGREDIENTS:

  • 1/2 cup natural peanut butter (or any nut butter you have) (for natural peanut butter, you may want to put it in the microwave for a but to make more creamy)

  • 1/3 cup honey or 1/3 cup of maple syrup (if vegan)

  • 1 tsp vanilla extract

  • 1 cup old-fashioned oats (raw)

  • 2/3 cup ground golden flaxseed meal

  • 6 Tbsp vegan chocolate chips

TIP: this is a fun recipe, you can literally add anything that you have. Shredded coconut is also a great addition!


INSTRUCTIONS:

  • In a mixing bowl, stir together peanut butter, honey and vanilla extract.

  • Add remaining ingredients and stir until evenly coated.

  • Transfer mixture to refrigerator or freezer and chill until mixture has firmed up a bit, about 20-30 minutes.

  • Remove from refrigerator and shape into 1-inch balls.

  • Store in refrigerator in an airtight container.
