Gluten-Free, Vegan Onion Rings

This recipe is a family favourite! Not only that, but it's super easy to make and only requires a few simple ingredients. I also love making these with my children. I try not to use oil as much as possible, which is why I choose to bake these in the oven. You can also fry them on the stove or stick them in the air fryer!


NOTE: You can make these your own. I love adding different spices to the mix. Some favourites are, garlic, paprika and dill. You can also play around with dips! In my family we love using ketchup, guacamole and mayo, so tasty!


I also like to spray the onion rings with a little bit of oil before I. put them into the oven. It helps them brown better and adds a little bit more crispiness.

INGREDIENTS:

- 1 large sweet onion

- 1 cup of gluten-free

- 1/2 tsp salt

- 1/2 tsp garlic powder

- 1/2 tsp paprika

- 1 cup water or vegetable broth

- 2-4 cups of panko (can also use ground oats)

- 2 tbsp of nutritional yeast (optional, but yummy)


INSTRUCTIONS:

- Preheat Oven to 425.

- Cut a large onion into thick slices.

- Mix salt, garlic powder, paprika and flour together

- Slowly add liquid to the dry ingredients and mix

- Place the Panko breadcrumbs and nutritional yeast (optional) in a flat dish

- Dip the onion slices into the batter and then into panko

- Transfer onto a lined baking sheet

- But them in a preheated oven for 15-20 minutes, until crispy.


Serve with any and all dips and enjoy!
